Located in Tokamachi, IKOTE was established as a café-restaurant during the 2015 Echigo-Tsumari Art Triennale. This unique two-story wooden structure draws inspiration from "kamakura" (snow huts), an icon of “snow country” Niigata. It was meticulously crafted using traditional construction techniques from the region, and bursts with the warmth of wood and a liberating openness. Within these cozy walls, IKOTE serves up delectable dishes inspired by the area's rich culinary heritage, utilizing the freshest seasonal ingredients loved by even small children.
