Hokusetsu Brewery is one of the most renowned sake breweries on Sado Island. Among their diverse range of sakes, YK35 Daiginjo stands out as their most popular.
YK35 is a meticulously crafted Daiginjo sake. It uses Yamada Nishiki rice, grown under contract right on Sado Island, and is polished down to just 35% of its original size. This sake is produced using traditional methods, employing koshiki (a traditional rice steamer) and koji-buta (specialized trays for making koji mold). The result is a handcrafted sake born from long-term, low-temperature fermentation.
What makes this particular shizuku sake truly special is its unique production method: the moromi (fermenting mash) is never pressed by machine. Instead, it's placed into cloth bags and suspended, allowing only the pure drops that naturally fall to be collected. This creates a sake that is genuinely exceptional.
