Two of Japan's major rivers, the Shinano and Agano rivers, which flow into the Sea of Japan are located in Niigata Prefecture. What is “Kiwami”?

The Kiwami course provides ten pieces of high-grade sushi, including seasonal fish, uni (sea urchin), toro (tuna), and ikura (roe), for 3,000 yen (includes a bowl of soup). A number of sushi restaurants in Niigata Prefecture provide this menu at the same price. Founded in 1937, the third-generation master of Sushi Kappo Sekaizushi, the head of the sushi union, puts a great deal of effort into planning menus and publicity activities. This famous restaurant has spread the fame of Niigata fish around the country. Its seared nodoguro rice bowl is particularly popular—it gained many fans, including some who come from overseas to enjoy it. In addition to nigiri, the restaurant is known for its superb pairings of Japanese food and local sake to bring out the best in local fish and seasonal produce.

Chiyozushi

Founded some four decades ago, Chiyozushi has been beloved by patrons from all over the country. Starting with its nigiri, made using the freshest seasonal fish, it also offers a wide range of only-in-Niigata tastes like noppe stew, nodoguro, baigai sea snail, and fish soup. The wide range of local sake are the perfect accompaniment to sushi or individual dishes.

Here you can enjoy genuine sushi at reasonable prices. There are some fifty types of the restaurant’s signature “okonomi” nigiri sushi made from dried seaweed and rice prepared using specially selected rice vinegar. This old-established restaurant is said to have been the first to introduce Edomae sushi to Niigata, back in the 1920s. Many patrons coming from both Niigata and around the country flock here to enjoy genuine Edomae sushi. Instead of following trends, they continue to create Edomae sushi with the taste of the 1920s.

Marui provides fresh local fish caught off Niigata and Sado at low prices. The famous nodoguro is just one of some forty types of toppings, which, along with local dishes that really bring out the flavors of their ingredients, can be enjoyed with local sake. The restaurant’ motto is to provide sincere, customer-oriented service and to serve the day’s catch on that day.

Registered as a broker, the master bids on local fish each morning at the Ryotsu Port fish market, which he serves in his restaurant. This restaurant serves Koshihikari rice harvested from Mt. Kinpoku, and their hand-made salted fish guts, seafood soup (oki-jiru), fugu (blow fish) nigiri, sazae (turban shell) on rice, and pesticide-free vegetable dishes are all made from only the freshest ingredients.

This long-established shop boasts a century of history. The shop’s pride is its sushi made using fresh fish landed at local ports, and there are normally at least twenty different types to choose from. The rice is sourced from local farmers, and the taste is enhanced through the use of salt from Sasagawa-nagare. Their Sake Oyako-don (salmon and salmon eggs on rice) is not to be missed as Murakami is known as the “salmon town” for how the fish return up the Miomote River to spawn.

The Nihonkai Nigiri, using locally-caught seasonal white fish, is very popular. The unagi (eel), dating back to previous generations, is also one of the main specialties, aside from which local produce like Oyashirazu mozuku seaweed and gengyo (deep sea fish) are also not to be missed.
