Making the most of nature to make wine for over three centuries
 
 In 1890, the founder of Iwanohara Winery began making wine from his personal garden. From the very beginning, he aimed to make wine by making use of nature, and in 1891 he constructed a yukimuro snow-based cooler in his second stone storehouse for maturing wine, which was used until around 1950. The intentions of the founder were revived in 2005 when a new building that can store 330 tons of snow was constructed and the use of yukimuro facilities was implemented once again.
 The yukimuro preserves snow and uses it not only for refrigeration, but is also for the maturation of the wine. Compared to when electricity was used for refrigeration, the carbon dioxide emissions are 4-6 tons less per year.
 A leisurely tour of the winery including the second stone storehouse takes only about 10 minutes. The temperature inside the yukimuro is kept at about 4-5℃ even in summer, so it is cool even in the mid-summer heat. You can even touch the snow.
